Tapas refers to the typical Spanish style of serving food, rather than specific dishes. It is a small portion of food that you can usually share with your tablemates. The story behind their origin is that they started out as small slices of meat or bread served in bars that patrons could use to "cover" their drinks in order to keep flies or mosquitos out. In fact, the verb "tapar" in Spanish means "to cover".
